Crispy Keto Hash Browns

Keto hash browns serve as a suitable alternative to the regular hash browns. They are prepared using cauliflower. Yes, the nutritious and keto-friendly cauliflower. Ingredients

  • 4 cups Riced cauliflower
  • 1 White onion
  • ½ Parmesan cheese
  • 2 tbsp Olive oil
  • 2 Eggs
  • Salt and pepper

 

Method

  1. Preheat oven to 200 C.
  2. Steam the riced cauliflower using a microwave for 2 mins to make it tender.
  3. Allow to cool and drain patiently and thoroughly - this is particularly important as we need to get as much moisture out of the cauliflower as possible.
  4. Grate or dice the onion.
  5. Stir and mix together all of the other ingredients.
  6. Line the baking tray with parchment paper.
  7. Coat it with cooking spray.
  8. Shape mixture into flat rectangular shape and place on a baking tray.
  9. Place inside the oven and bake for 40-50 minutes till it’s crispy and cooked.
  10. Remove from the oven and cool off a bit.
  11. Ready to be served
