  • Celeriac

  • Olive oil

  • Salt



  1. Heat oven to 150 C.
  2. Thoroughly wash the whole celeriac and pat dry.
  3. Brush the outside with olive oil, sprinkle liberally with coarse salt.
  4. Rub the salt around evenly.
  5. Bake for 2 hours.
  6. Bake till the outside is evenly crisp and the inside is soft.
  7. Remove and allow to cool.
  8. Peel off the outer crisp layer (optional).
  9. Cut into slices and serve with your favourite sauce.
